Meet

Chef Dan

I made Mabuhay Austin in the belief that food should be focused on building community. What it means is that we put people first and the food is a vehicle to a fantastic experience.

Filipino Born

Chef Dan has deep roots in asian cuisine and culture. He was born in the Philippines and immigrated to California when he was 13.

Not only did Chef Graduate from the prestigious Culinary Institute of America Hyde Park, he attended 4 years on a full scholarship that he won through culinary competitions.

CIA Graduate

After graduating from the CIA, Chef Dan honed his skills in fine dining with a 3 year internship at the Broadmoor with rotations spanning from steakhouses, brasseries, high volume banquets, and pastry.

Fine Dining

Chef Dan finally made his way to Austin to join the sushi masters at Uchiko. He spent 4.5 years here mastering the craft of asian fine dining and sushi making.

Sushi

After 9 years honing my craft in fine dining establishments, I left the restaurant industry in 2020 to provide my independent culinary services directly to you.

Why
I do what I do

Food can be fun! I want to be a part of someone’s life in a way that brings joy through the relationship that I provide with them through food and the personality that I bring to their kitchens.

I’m a little different

Asian-Fusion is something that gets thrown around a lot. With a true background in various cuisines and my Filipino upbringing, that experience is as authentically different as it gets.

I really believe in

The power of food.  Food gives us life — whether it is celebrating a marriage, dinner with our family, or old friends we’ve missed. Food is the common thread between us all, and brings us to a shared table.
